A capon is the perfect special occasion bird and is the opted choice for holidays and/or special occasions, especially Chicken BBQ with family and friends. Capon meat is very white and, unlike that of other chickens, marbled with fat. Larger than a hen and smaller than a turkey, a capon is full-breasted with tender, juicy, flavorful meat that is well suited to roasting. Because of its size, the capon is a good choice to feed a dinner party or even a small Thanksgiving gathering in place of turkey. Our capons are humanely raised with full access to open fields, and allowed to grow at a natural rate, with no growth stimulants ever used.

To bring you quality and tradition, we work with a group of farms in Ruai’s vast Kamunyonge Estate to Kipawa Estate to provide us with our capons. Offering a complete farm-to-table audit trail, these farmers focus on best animal welfare practices. Humanely-raised in free-range conditions with full access to open fields, our capons are allowed to grow at a natural rate, with no growth stimulants ever used.

A capon is a male chicken that is gelded (that is, castrated) at a young age, and allowed to grow until it reaches between (1250gms to 1500gms). Our farmers use traditional surgical methods, rather than the chemical caponization more common in modern farming. The nutritionist-developed corn and grain diet is free of protein supplements, and added poultry or fish by-products; it includes constant access to fresh water.

Goat/Lamb Leg Grilled From Grassfed Boran Goats…

Our grilled Goat leg meat is usually produced from goat that is less than one year old and the best quality is usually referred to as “prime” and really the same rules apply to goat as they do to lamb.

Slow cooking grass fed meat works well as it lessens moisture loss. Leg of lamb or goat is easily prepared this way. Maintaining the meat’s internal temperature below 122°F for as long as possible maintains the most moisture and allows the meat’s enzymes to act as natural tenderizers to produce the best texture and flavor. With high roasting temperatures the water inside the muscle is lost at a higher rate and proteins toughen.

High quality lamb and goat meats do not need strong seasonings that distract from their delicate, natural flavors. Trust simple seasoning and rubs or just use salt and pepper. In this recipe smoking chips or bay leaves are used to enhance and add interest to the natural flavors.
