With our herds exclusively free range and grass fed on lush pastures, the fillet can be dry aged by our Pro Butcher to relax the beef into exquisite tenderness. When sliced specifically for your order, the result is a thick, juicy disc of lean and utterly tender beef.
After the ageing process the final product loses more than 50% of the original weight but packs in almost 3X the nutritional value due to the high concentration per unit due to the process. Regarded as the very finest cut of beef and the most tender. These luxurious steaks are from the underside of the sirloin which are delicately butchered from the ‘T’ bone which connects the sirloin and fillet cuts. Ideal for a special occasion, dry aged on the bone for a minimum of 21 days before butchering. Simply flash fry or grill to your preference.
