Red Snapper Fish are a great many varieties, including Five Line, Yellowtail, Silk, Crimson, Stripey, Moses, Mangrove Jack, Emperor and Goldband, but the undisputed heavyweight champion is the Red Snapper (Lutjanus sanguine) which you will get right here at NYAMA TAMU. All Snappers are available in sizes from 500g to 1kg, which provide portion size whole fish, and fillets, but Red Snapper can grow up to 11kg! Snapper usually are pale pink, flaky, with a distinctive sweet taste – and is usually served with its attractive skin on, which can be eaten – but must be de-scaled. Snappers can be grilled, pan-fried, baked, roasted, barbecued (whole fish), and will take as much flavour as you can throw at it. Loads of chilli, garlic, lime, coriander, it even works with curry flavours – treat it brutally, it’ll love it!
The rib section of beef spans from ribs six through twelve. Ribeye steaks are mostly composed of a long and heavy segment of pure, top quality, beef muscle meat. Capon meat is very white and, unlike that of other chickens, marbled with fat. Larger than a hen and smaller than a turkey, a capon is full-breasted with tender, juicy, flavorful meat that is well suited to roasting. Because of its size, the capon is a good choice to feed a dinner party or even a small Thanksgiving gathering in place of turkey. Our capons are humanely raised with full access to open fields, and allowed to grow at a natural rate, with no growth stimulants ever used.

A capon is a male chicken that is gelded (that is, castrated) at a young age, and allowed to grow until it reaches between (1250gms to 1500gms). Our farmers use traditional surgical methods, rather than the chemical caponization more common in modern farming. The nutritionist-developed corn and grain diet is free of protein supplements, and added poultry or fish by-products; it includes constant access to fresh water.

Cooking Methods: Roast, Poach, Smoke, Barbecue
Cooking Tips: Using a fork, prick the skin all over before roasting a whole duck to help the fat render. Add aromatics like shallots, citrus, garlic, and/or herbs to the cavity for flavor. Using a rack or vertical roaster in a shallow roasting pan will allow the skin to crisp nicely. Save the precious rendered fat for another use.
